Amul
I played this neat little game at Spiel '19 and it was one of my favourites of the fair (my first impressions are in issue 200 of To Win Just Once). It's set in the eponymous Persian trading city where players collect sets of different cards, each of which scores points in its own particular way.
The game has some ingenious mechanisms that allow players to gradually build up a tableau of cards in front of them. However, scoring may also include cards in hand, so players have some tricky interactions to deal with. The game only lasts nine rounds, too, so players need to get a move on.
My favourite bit, though, is that different cards (not just more) are added to the deck at the start of the game as the number of players increases. This means the game is slightly different at each player count.
